Vegan Caesar Salad
Ingredients
- 2 hearts of romaine lettuce
- 4 radishes, sliced
- ½ cup of naturSource Vegan Caesar Uncrouton™
Tofu Dressing
- 300g silken soft tofu
- 1 clove of garlic
- 1/4 cup nutritional yeast
- 1/4 cup lemon juice
- 2 tbsp olive oil
- 2 tsp Dijon mustard
- 2 tsp vegan anchovy paste*
- 2 tsp capers
- 1 tsp Worcestershire Vegan Sauce*
- Pepper, to taste
Directions
- In a food processor, blend all the ingredients for the dressing
- Place lettuce in 4 bowls, add radishes and dressing. Sprinkle with naturSource Vegan Caesar Uncrouton™ and serve immediately
*Most Worcestershire sauces contain anchovies, so they are not vegan. Sauces without anchovies can be found in specialty grocery stores. To turn this salad into a main course,add bacon-flavored tempeh, smoked tofu or roasted chickpeas
